Sori Yanagi's popular Nitride Treatment frying pan uses high carbon steel as the basic material. After nitriding treatment, the material is harder and more rust-resistant than ordinary high-carbon steel. The special mesh pattern treatment on the pan surface effectively prevents scorching and sticking. The mesh pattern also increases the surface area, enabling efficient heat transfer to the food. This reduces cooking time while preserving flavour and nutrients.
